Summer Salsa, Fresh from the Garden
The garden tomatoes are finally ripening! With the addition of a few more from my local farmer’s market and some cilantro, I made a huge batch of summer salsa last night. Mmmm… it’s the perfect cool snack for hot summer days.
Fresh Summer Salsa
2 c tomatoes, cubed
1 lime, freshly squeezed
½ tsp salt
sprinkle of sugar (to cut the acidity)
½ jalapeño, chopped (add as much heat as you want)
½ onion, finely chopped
½ fresh cilantro, finely chopped
The most time consuming part is all the chopping and prep work. I just toss everything together in a big bowl, cover it, and allow the flavors to meld together for a few hours in the fridge. Nothing could be easier. There’s no oven or stove to heat the house and it lasts for days. I usually divide my salsa into two containers and add more jalapeño and/or habanera for my husband.
